Job Description

As an Italian Specialty Chef, you will have complete responsibility for directing, training, supervising, planning, and coordinating all areas within the culinary department, specifically the Fine-dining Italian Restaurant. This includes any projects requested by the Director of F&B or Executive Chef. You must be comfortable leading and managing the kitchen team, providing ongoing support and training. Your role will be to ensure the highest quality of food and beverage for our guests, ensuring meticulous consistency, taste, and presentation of all dishes. Additionally, you will monitor food inventory monthly, maintain control of orders and purchases, and ensure efficient handling of all deliveries in line with hotel standards. You will review daily food cost analysis to maintain budget compliance while preserving the company’s corporate image. Overseeing cleanliness and hygiene in all kitchen spaces and procedures will also be part of your responsibilities.


– Bachelor’s Degree or any related Culinary degree
– Minimum 3-4 years of industry and culinary management experience in an Italian Signature Restaurant/Fine-Dining Restaurant
– Previous experience in controlling food and labor costs, demonstration cooking, menu development, pricing, and training culinary team members
– Excellent knowledge of Italian Cooking Styles
– Previous experience in a 5-star hotel, particularly in European/Asian or South East Asian properties, would be an added advantage
– Eye for detail to achieve operational excellence
– Passion for leadership and teamwork
– Fluency in English is a must
